- 2 large eggs

- 1 small zucchini, chopped

- ½ cup sliced mushrooms

- ¼ red bell pepper, chopped

- 1 tablespoon fresh milk

- 1 teaspoon olive oil

- 1 tablespoon chopped fresh cilantro

- Garlic-and-herb seasoning, to taste

- Dried sage, to taste

- Black pepper, to taste

- A handful of fresh spinach, optional
Directions
- Whisk the eggs and fresh milk together in a small bowl.
- Heat the olive oil in a skillet over medium heat. Add the zucchini, mushrooms, and red bell pepper. Cook for 5–6 minutes, stirring occasionally, until the vegetables are tender.
- If using spinach, add it to the skillet and cook until just wilted.
- Reduce the heat slightly and pour in the egg mixture. Gently stir until the eggs are fully cooked.
- Season with garlic-and-herb seasoning, dried sage, and black pepper.
- Transfer everything to a bowl, sprinkle with fresh cilantro, and enjoy while warm.
