Easy Zucchini, Egg & Mushroom Breakfast Bowl

Zucchini, egg, and mushroom breakfast bowl with red bell pepper and cilantro

Start your morning with a colorful bowl made from simple, everyday ingredients. Fresh zucchini, mushrooms, red bell pepper, and eggs come together for an easy and flavorful breakfast that feels light, fresh, and satisfying.

 

Ingredients

    • 2 large eggs

    • 1 small zucchini, chopped

    • ½ cup sliced mushrooms

    • ¼ red bell pepper, chopped

    • 1 tablespoon fresh milk

    • 1 teaspoon olive oil

    • 1 tablespoon chopped fresh cilantro

    • Garlic-and-herb seasoning, to taste

    • Dried sage, to taste

    • Black pepper, to taste

    • A handful of fresh spinach, optional

 

Directions

  1. Whisk the eggs and fresh milk together in a small bowl.
  2. Heat the olive oil in a skillet over medium heat. Add the zucchini, mushrooms, and red bell pepper. Cook for 5–6 minutes, stirring occasionally, until the vegetables are tender.
  3. If using spinach, add it to the skillet and cook until just wilted.
  4. Reduce the heat slightly and pour in the egg mixture. Gently stir until the eggs are fully cooked.
  5. Season with garlic-and-herb seasoning, dried sage, and black pepper.
  6. Transfer everything to a bowl, sprinkle with fresh cilantro, and enjoy while warm.
